Fontorfio is an ancient source located at the foot of the vineyards and the house that years ago we decided should be the place to spend the future years of our lives. Fontorfio is in Cossignano, a small medieval village in the Marche hinterland halfway between the Sibillini mountains and the sea. A country that has always lived of agriculture and Fontorfio was a farm that cultivated olive trees, cereals, grapes, produced wine and raised cattle. Here we arrived years ago, and here we are continuing old farmers’ work, maintaining their methods of processing, essentially manual, without the use of modern mechanics, without chemistry and with the intention of preserving the territory.

The farmhouse is located at the highest point of the property and it is partly built over an old oven used to bake the bricks. Some parts of the building are a few hundred years old and all the construction has undergone several transformations hosting many families over the centuries. We know that several families of sharecroppers also lived there at the same time. During the renovation several walled doors and windows and sites of old fireplaces were found. The ground floor on our arrival was used partly as a cellar and partly as a stable that also had access with a hatch from the upper rooms.

In our cellar we do not use selected yeasts, we do not use sophisticated wine making practices, no filtration. The use of sulfur is reduced to a minimum and in some cases is zero.

The glass is strictly turbid (it should be kept in mind to shake the bottle gently in the beginning, if there is no aversion to the intake of yeasts, now widely in lysis, or that at the end will remain all at the bottom) for a wine with a frank character. It deliciously bears the acid shoulder of which, despite the reduced percentage, is certainly the creator of Montepulciano while gaiety of Passerina and roundness of Montepulciano seem to recall the “rightness” of certain performances a cappella in SwingleSingers styleThe scent of yeast is rightly present, but perfectly integrated. Many citrus fruits, a pinch of white flowers and a touch of honeycomb, first of all honey from this or that plant. Robust structure, it is a “wine with bubbles” suitable for appetizers but that will not demerit at all with many main courses and with many seafood courses and some preparation of white meat not too demanding.

Wine not completely dry due to a spontaneous stop of fermentation that left a residual sugar of about 5 g/l. alcohol powerful as usual, together with this residue, strong minerality and explosive freshness (with a pleasant hint of carbonic in most bottles, possibly avoidable with a caraffatura) determine a compulsive drink. The bouquet is already large but still not perfectly delineated, a note of aromatic grass is always gently evoked (it would be said thyme), but already explosive are the lime and a floral orange blossom; golden apple fruit and gentle bourdon of hazelnut. Brioche.

A still red with a good structure, an intense ruby, typically “Montepulciano”. Always extremely “fruity”, in the year under review the red berry is so fresh and fragrant that sometimes you would have the feeling of biting – rather than drinking – Whisper of berries; the violet gently winks from behind and you breathe a body in perfect balance. Tannins are elegant. Alcohol is just right, a wine with a great spectrum of combinations and very quick to drink.

White wine of the “orange” type. It can be produced either from Pecorino or Passerina grapes or from the mix of the two varieties..
It is left to macerate on the skins for the whole period of fermentation or more. It rests on the lees for three to six months with continuous batonage before bottling. Unfiltered. It then rests in the bottle for one to three years..
It’s a wine with a good structure, versatile at the table and easy to drink.

This 100% Montepulciano only produced only in the best vintages, comes from a small vineyard located at the top of the hill of Fontorfio. The loamy/sandy soil lays the foundations for a structured and colourful wine. Tannin, acidity and wood are well balanced making the drink extremely enjoyable.
